    The Remarkable Journey of Fontainebleau Las Vegas: A Story of Persistence and Success

    The opening of Fontainebleau Las Vegas has been a long-awaited event filled with drama and challenges that make it worthy of a book or movie. Jeff Soffer, the chairman and CEO of the resort, acknowledges the cinematic quality of the journey that led to the completion of one of the most remarkable comeback stories in the history of the hospitality industry.

    Originally intended to be the sister property of the iconic Fontainebleau Miami Beach hotel, the Fontainebleau Las Vegas faced numerous obstacles since its groundbreaking in 2007. The construction came to a halt in 2009 due to the financial crisis and subsequent recession, leaving the building unfinished and a constant reminder of the challenges faced by the developers.

    After changing hands several times, Soffer and Fontainebleau Development, in partnership with Koch Real Estate Investments, regained control of the property in 2021. The resort’s plans were unveiled, construction resumed, and the long-awaited opening is set for December 13, 2023.

    One of the key figures in the revival of Fontainebleau Las Vegas was David Grutman, a Miami-based hospitality entrepreneur and restaurateur. Despite being moments away from signing a deal with another Las Vegas casino-resort, Grutman heeded Soffer’s call and became a pivotal partner in bringing Fontainebleau Las Vegas to life.

    Grutman’s Groot Hospitality will introduce Fontainebleau Miami Beach’s renowned nightclub LIV and two of his popular restaurants, Komodo and Papi Steak, to the Las Vegas Strip. LIV Beach dayclub, a new addition to the portfolio, will open in spring 2024.

    Fontainebleau Las Vegas aims to provide a luxurious experience and cater to the evolving preferences of the Las Vegas audience. Soffer acknowledges the transformation of the city and emphasizes that LIV and LIV Beach may not be the biggest nightclubs in Vegas, but they will deliver the best experience.

    With its 36 new restaurants and bars, Fontainebleau Las Vegas offers an extensive dining and entertainment selection. The resort is vertically integrated, separating the amenities from the gaming action, and situated on a compact 25-acre footprint.

    The opening of Fontainebleau Las Vegas marks a significant milestone in the history of the resort and the Las Vegas Strip.
